  • Why do you say so? It's 60C which is medium and I know it is because I used an immersion Circulator. I cooked lamb rump last week and had it more on the rare side and a lot of fat was unrendered. It was way better cooked to medium as the fat melted in my mouth. And this is coming from someone who only likes fillet steak completely raw on the inside.
