- Piping hot cast iron skillet with some butter. Seasoned with sea salt and pepper. Seared on one side for a little less than a minute, flipped and put into the oven on 500 degrees for 2 minutes. My new skillet came with a lid, which I have never used before, but I gave it a shot this time. I think that's what made the difference. This might have the been the best steak I've cooked so far.
